Nothing adds a little sparkle to a mid-winter weekend like a perfect Dutch Baby (or pannekoeken) with fresh lemon and lots of really good coffee.
For one* perfect Dutch Baby:
Preheat the oven to 500 degrees Fahrenheit
- 2 eggs
- 1/2 c milk (or almond milk)
- pinch of salt
- 1/2 cup flour
Place a pie plate or 9″ cake pan in the oven to heat – give it a few minutes
Place 1 tbls butter in the pan in the oven – let it melt but try to avoid it burning and turning black (still edible but not as good!)
Take the pan with the butter out of the oven and place it someplace safe (like the top of the stove) Pour in the batter
Return the pan to the oven and bake for approximately 20 minutes – use the oven light to check on it as it will fall if the door opens too soon. It’s ready when the edges have risen and are a beautiful brown.
Release it to a plate and add lemon juice and powdered sugar, or sauted apples, or fresh raspberries – the possibilities are endless… and delicious!
*Simply multiply ingredients for more people – your oven may max out at 3 or 4 depending on its size and the pans you use
